This is an exquisite Banana Pudding style dessert you can eat as a snack every day! No guilt whatsoever, cause this snack is extremely healthy.

The walnuts’ earthy and tangy taste blended with the banana and greek yogurt gives it the awesome taste of toffee.

I usually love this to eat this a couple of hours before going to bed giving me that extra boost needed to do some work, read a book, or even exercise! It’s delicious but at the same time is very nutritious with healthy fats of the walnuts, all the properties of the banana, and some healthy protein contained in the Greek Yogurt.

Banana Pudding Step by Step

Firstly, I always blend the banana and the greek yogurt until they come into a smooth paste. If you prefer you might leave some banana pieces to decorate on top.

Now, it’s simply a matter of taste whether to blend completely the walnuts into a smoothie, leave a couple to put on top, or just quarter them without blending them.  I really like to blend the walnuts well giving the banana yogurt mix a toffee taste without adding the toffee usually found in a banoffee pie.

When I am doing this for the kids, I have to make sure to blend the walnuts well and therefore add some almond milk so that the mixture blends easily. Of course, this also depends on the blender used!

Serve this in a nice ice-cream cup with bananas and walnuts on top. If you wish, you can also add some dark chocolate chips on top.

The best thing about this recipe is that it freezes easily and can be used used to serve later as an “ice-cream”. The taste is awesome only with fewer sugar involved!.

 1 Banana, medium
 50 g Greek Yogurt
 8 Walnuts
