Try out this Banana Bread using almond flour topped with Chocolate chunks and Strawberries. At home we urgently needed to cook a cake for my kids’ remote cooking class but we missed some ingredients. This is the result of the improvised session. Luckily I jot notes everytime I try something new and I added it here for you.

INGREDIENTS
Dry Ingredients
- 3/4 cup almond flour
- 3/4 cup spelt flour
- 2 tbsp chia seeds
Wet Ingredients
- 3 bananas, ripe
- 3 tbsp maple syrup
- 2 flax eggs (2 tbsp flaxseed + 6 tbsp water). Otherwise use 2 eggs.
- 2 tbsp chia seeds
How to make a Flax Egg?
To make a flax egg, mix a tablespoon of ground flaxseed meal with 3 tablespoons of water. Mix together, and leave it to rest for 15 minutes until it thickens.
INSTRUCTIONS
- Mix the wet ingredients together, add the dry ingredients.
- Put in oven for 25 minutes at 190 degrees C. Serve room temperature
