Chocolate Chip Flapjack Recipe

Flapjacks are a variation of traditional pancakes using oatmeal as a base for the batter. They’re very popular with British but in truth every country probably knows them as oat-based bars. I kind of associate them with grancereale Italian biscuits but these Chocolate Chip Flapjack Recipe are another level of crispy goodness. The recipe for preparing these oat bars is really simple, they can be customised by adding chocolate or fruit and are ideal for a snack, moreover, if stored in a tin box they are fresh and fragrant even after several days.

Chocolate Chip Flapjack Recipe

Ingredients

  • 1 1/4 sticks (5 1/3 oz) Butter. To bind it all together you can use butter, or your favourite choice of oil. I prefer coconut oil giving it that slightly coconutty hint.
  • 3/4 cup Brown Sugar. The sugar helps for the consistency of the batter and also give it a caramelized taste. For healthier flapjacks I just reduce the sugar and add some Chia seeds and a little more oats to the mix.
  • 6 tbsp Maple Syrup. I might go without the sugar but I love my flapjacks with maple syrup.
  • 4 1/2 cup Oat Flakes. I like to use medium rolled oats avoiding the bigger jumbo oats and the tasteless instant oats.
  • 1/4 cup Chocolate Chips. It’s important to add the chocolate chips or drops after melting the sugar and butter so that they don’t melt in the mix.

How Do You Prepare Chocolate Chip Flapjack Recipe

  • Preheat the oven at 140°C and line a 9 by 12 inch baking tin with parchment paper.
  • Add the butter and brown sugar in a saucepan and leave it to melt. Optionally you can also choose the microwave to melt the mix.
  • Add the maple syrup once the butter and sugar have melted and stir well.
  • Mix the oatmeal together with the melted ingredients and make sure that the oat flakes are all well coated.
  • Add the chocolate chips into the batter mixing everything well and making sure that the chips are evenly distributed. Optionally you can also add other ingredients like fruit and nuts.
  • Pour the mixture into the mold distributing the mixture evenly and level the surface with a spatula.
  • Bake at 140°C and cook for about 40 minutes.
  • Remove the pan from the oven and let the mixture cool
  • Cut into 16 bars and enjoy these oatmeal bars at breakfast or as a healthy snack.
