What is Thimbleberry Jam?

Thimbleberry jam is a spreadable fruit preserve made from the ripe berries of the thimbleberry plant (Rubus parviflorus). These berries are small, delicate, and resemble miniature thimbles, hence the name “thimbleberry.” The jam preserves the natural flavors and vibrant color of the berries, resulting in a sweet and slightly tangy taste profile.

Why does this recipe work?

Thimbleberry jam is made using a straightforward recipe that highlights the natural flavors of the berries. The recipe works due to the high natural pectin content in thimbleberries, which helps the jam achieve a perfect gel-like consistency without the need for additional pectin. Additionally, the balance between the sweetness and tartness of the berries creates a well-rounded flavor that appeals to a wide range of palates.

There are also many recipes where we can incorporate thimbleberry jam, showcasing its versatility and enhancing the flavors of different meals and desserts:

Ingredients

  • 2 pounds fresh thimbleberries
  • 4 cups granulated sugar
  • 1/4 cup lemon juice

Instructions

  1. Prepare the thimbleberries by rinsing them gently under cool water and removing any stems or debris. Wipe the fruits well and cut any large berries in half.
  2. In a large saucepan, gently toss the sugar on the thimbleberries.
  3. Stir gently to coat the berries evenly with sugar. See the tip below for doing this process overnight.
  4. Place the saucepan over medium heat until the sugar is dissolved.
  5. Increase the heat from medium to high and bring the mixture to a rolling boil, stirring occasionally to prevent sticking.
  6. Stir in the lemon juice once boiling to enhance the flavor and aid in the preservation process.
  7. Boil for another 15 minutes or until the jam reaches 220F or 105C.
  8. Stir often making sure the jam doesn’t burn and continue to boil for around 15 minutes or until the jam reaches 220F or 105C. At this point, you should see that the berries have softened and the mixture has thickened and bubbles completely cover the surface of the jam. See the tip below to understand when the jam is done.
  9. Remove the saucepan from the heat.
  10. Transfer the jam into sterilized jars, leaving a quarter-inch of headspace.
  11. Seal the jars tightly.
  12. Allow the jars to cool completely at room temperature before storing them in the refrigerator or a cool, dark pantry

Tips

  • Thimbleberries are delicate, so handle them with care to avoid bruising or crushing.
  • Adjust the sugar quantity according to your taste preferences and the natural sweetness of the berries.
  • To help the process of the sugar dissolving and ensure fruits keep their vibrant color, leave the thimbleberries and sugar uncovered at room temperature for 12 hrs or overnight.
  • To test the readiness of the jam, use the spoon or plate test. Place a small amount of jam on a chilled plate or spoon and let it cool. If it sets and holds its shape, the jam is ready.
  • Properly sterilize your jars and lids before filling them with jam to ensure longer shelf life.
