Russian Olivier salad is the classic Russian potato salad with eggs, carrots, pickles, sweet peas and a fresh, bright mayonnaise dressing.

This Russian Potato Oliver Salad (Салат Оливье) is a great classic of Russian Cuisine.  It’s also a staple salad used everywhere around the world. I cannot think of any supermarket which doesn’t have a ready-made Russian Salad for a quick salad on the go. The Ruska Salata is also an item one must surely have on their table on Bulgarian New Year’s Eve. The secret of this dish lies in the preparation of all the ingredients making sure they’re all chopped into small pieces of the same size. You must really taste every ingredient in every bite.

For the Perfect Russian Potato Salad

  • Dice all the ingredients small so that you can taste everything with every bite.

What You Need

  • Yellow potatoes – Peeled and boiled.
  • Carrots – Peeled and boiled.
  • Hard-boiled eggs – Optional if you follow an egg-free or vegan diet.
  • Pickles – Diced pickle of your choice.
  • Mayonnaise – Use homemade or storebought. Even vegan mayonnaise or yogurt can work well.
  • Ham – Ham or sausage are optional and can be replaced by chicken or vegan alternatives.
  • Peas – Drained canned peas or boiled fresh/frozen peas.
  • Vegan – Skip the ham and eggs and choose vegan mayonnaise.
  • Healthy Option – Swap the mayonnaise with Greek Yogurt and use turkey, chicken or tofu instead of ham.

Description

Russian Olivier salad is the classic Russian potato salad with eggs, carrots, pickles, sweet peas and a fresh, bright mayonnaise dressing.

Ingredients

  • 4 potatoes yellow, boiled and diced
  • 2 carrots medium, boiled and diced
  • 1 cup peas canned or boiled
  • ¾ cup Mayonnaise
  • 4 eggs boiled, diced
  • ½ cup pickles
  • 1 cup ham diced

Instructions

STEP 1

  • For the success of the recipe, we boil the potatoes, peas, eggs, and carrots separately. Make sure that the carrots and potatoes are not mush. Remove them from the heat as soon as they are ready. Leave them to cool.

STEP 2

  • Dice the pickles, potatoes, ham, eggs, and carrots into small pieces and place them in a bowl. Then we add the peas.

STEP 3

  • The Russian salad is perfect to be enjoyed cold and can be kept in the fridge covered with plastic wrap for one or two days.
