Banana Bread using Almond Flour

Try out this Banana Bread using almond flour topped with Chocolate chunks and Strawberries. At home, we urgently needed to cook a cake for my kids’ remote cooking class but we missed some ingredients. This is the result of the improvised session. Luckily I jot notes every time I try something new and I added it here for you.

Almond Banana Bread

Yields: 10 portions
Prep Time: 5 mins Cook Time: 20 mins Total: 25 mins


INGREDIENTS  

Dry Ingredients

  • 3/4 cup almond flour
  • 3/4 cup farro (spelt flour)
  • 2 tbsp chia seeds

Wet Ingredients

  • 3 bananas, ripe
  • 3 tbsp maple syrup
  • 2 flax eggs (2 tbsp flaxseed + 6 tbsp water). Otherwise, use 2 eggs.
  • 2 tbsp chia seeds

INSTRUCTIONS 

How to make a Flax Egg?

  • To make a flax egg, mix a tablespoon of ground flaxseed meal with 3 tablespoons of water. 
  • Mix together, and leave it to rest for 15 minutes until it thickens.

How to Make the Banana Bread

  • Mix the wet ingredients together, and add the dry ingredients.
  • Put in the oven for 25 minutes at 190 degrees C. Serve room temperature
