Sausages, peppers, and onions is a classic much-loved combination in Italy. Like all the Italian classic recipes they consist of a few well-selected ingredients. This shows that you don’t have to spend hours preparing an incredibly delicious meal in the kitchen. Prepare a sheet pan, cover the sausage and veggies with olive oil, salt, and seasoning and let the hot oven work some magic!

It’s the mix of the savory juice of the sausages while they brown and crisp and slowly seep and soften the onions and peppers that in turn infuse the sheet pan with their sweetness. In 30 minutes the sausages are perfectly browned and the onions caramelized.

This Mediterranean dish is a quick comfort meal perfect for a busy weeknight dinner. Together with the sausage, the sheet pan is packed with colorful peppers and onions and whipped out in 30 minutes! Try it once and this will become the quickest dish in your arsenal!

What You Need

  • Sausage. Buy good quality sausage from the butcher and avoid the grocery prepacked sausage if you’re looking for a more authentic taste. If you want to reduce the fat you can boil it a little bit before baking.
  • Onion. Choose white or red onion as you prefer. For me, the result is always so tasty!
  • Bell peppers. Choose between yellow, orange, and red bell peppers as they’re the sweetest and perfectly combine the saltier smoky taste of the sausage.
  • Olive oil. Toss some olive oil covering the onions and peppers in the sheet pan. D
  • Seasoning. I love to add a dash of dried oregano, Italian seasoning mix, and pepper. I tend to omit the salt unless I have any guests because the salt in the sausage pretty much satisfies my palate.

Onions Peppers and Sausage – Step by Step

STEP 1

Place the onions, peppers and sausage in a large sheet pan and add a dash of dried oregano, Italian seasoning, salt and pepper. Drizzle the veggies with olive oil and put in the oven at medium heat.

STEP 2

After 5-10 minutes check the sausages and turn them to brown on all sides. Optionally now that the sheet pan and vegetables are already hot you can add some white wine to the onions and peppers and leave to cook for 10 minutes

STEP 3

After 10 minutes turn the sausages again one last time. At this point, you might prefer to cut the sausages into slices and mix them with the other veggies. I like to leave the sausage as a whole or cut it from the center flattening it so that all its juices will mix with the rest of the ingredients.

STEP 4

Cover the sheet pan with aluminum foil or parchment paper and leave to cook for another 10 to 15 minutes.

Hint: If you want to first cut the sausage before frying it you can do that as well!

Serving Italian Sausage Sheetpan Dinner

I like to drizzle all the veggies with olive oil and a hint of oregano and cayenne pepper.

These are the sides that go well with sausage and peppers:

-> baked potatoes,

-> roasted potatoes,

-> mashed potatoes,

-> polenta,

-> zucchini and other veggies. (I tend to avoid carrots as they take longer to soften when baking.)

-> rice

Usually, I calculate (per person):

  • 1 sausage and
  • 1/2 a pepper .

  • 2 tbsp olive oil
  • 1 white onion sliced
  • 2 red and orange peppers , sliced
  • 1 tbsp spices dried oregano and/or Italian seasoning
  • salt and pepper

Instructions

  • Place the onions, peppers and sausage in a large sheet pan and add a dash of dried oregano, Italian seasoning, salt and pepper. Drizzle the veggies with olive oil and put in the oven at medium heat.
