These Keto Quesadillas are perfect for busy Mondays or Tuesdays especially if you have some leftover chicken from the weekend and you need to make sure you’re respecting all the macros and not exceeding in carbs.
For the filling, here I chose a healthy filling using green and red peppers, onions, cheese and spices and finally serve them with guacamole, diced tomatoes and if you want more cheese or whatever you like best. A quick meal which should never be underestimated.

What is a Quesadilla?
Quesadillas are a snack of Mexican cuisine that is prepared with a corn or flour tortilla folded in half and filled with cheese, meat, and also vegetables. This Mexican street food is very popular in Mexico where you can find various kiosks in local markets all offering different including a quesadilla using a quite expensive ingredient called huitlacoche that tastes like corn and mushrooms. In order to do homemade corn tortillas you need a special type of cornmeal flour that can be purchased from ethnic food shops cause using normal cornmeal you won’t obtain the same result!
What is a Keto Quesadilla?
A Keto Quesadilla is a quesadilla where you use ingredients that reduce the carbs macro and increase the proteins. This can be done by opting for a tortilla higher in proteins and lower in carbs which can be bought from the supermarket or otherwise you can try to make our homemade buckwheat tortilla recipe. Another important thing is adding protein to the filling and prefer vegetables lower in carbs like onions, and green peppers to carrots and corn.
Ingredients
- 2 whole wheat or corn tortillas
- 1/2 lb of chicken breast, strips or small pieces
- 1/2 red and green pepper mix, finely chopped
- 1/2 onion, finely chopped
- 1/2 tsp cumin
- 1/2 tsp paprika
- 1/2 tsp cayenne pepper
- 1/4 tsp salt
- 1 tsp olive oil
- 1/4 cup cheese, grated (or Greek Yogurt)
For toppings
- 1 avocado
- 2 tbsp lime
- 1/2 tsp garlic powder
- 6 cherry tomatoes, quartered or chopped
How to prepare: Keto Quesadilla
- Add a dash of oil to the pan until hot.
- Stir-fry the red and green peppers in a skillet together with the onions until the onion becomes soft and translucent
- Add the chicken and season it with some cumin, pepper, paprika, and cayenne pepper.
- Meanwhile, prepare quickly the guacamole by crushing a ripe avocado with a fork, adding 1-2 tbsp lime juice and garlic powder.
- Layer one tortilla with the stir-fry and the cheese.
- Top with the other tortilla.
- In a pan add some olive oil and cook for 2-4 minutes until slightly browned.
- Flip the quesadilla over and cook until also slightly browned.
- Cut the keto quesadilla into quarters and serve with the tomatoes and guacamole.
