Fried Chicken Meatballs

Fried chicken meatballs are a quick and straightforward second course, a delicate variation of the classic meatballs. All you need to do is accompany them with baked potatoes, a side of minted peas, or a crunchy salad for a healthy and complete meal.

What are fried chicken meatballs?

In this recipe, we use chicken instead of the classic ground beef and pork to fry the meatballs for a simple yet super delicious result suitable for everyone’s needs. Soft and succulent, everyone likes them, young and old included, and they are suitable for any family lunch or dinner.

You can cook the meatballs in a pan with a drizzle of oil if you don’t want to fry. If you like, you can flavor the dough with the herbs and spices you prefer, such as basil, mint, parsley, and turmeric, and accompany them with a sauce of your taste, such as mayonnaise or yogurt dressing. To obtain tender and delicious meatballs, the secret is all in the bread soaked in milk: therefore, avoid skipping this step or swapping the milk with water.

I prefer buying ground chicken from my trusted butcher rather than mincing the chicken breast at home. But if you prefer, you can easily use a kitchen mixer or a meat grinder to give it a more grainy and rustic texture.

How to make fried chicken meatballs

Ingredients

  • 17 1/2 oz (500g) chicken breast, minced
  • 5 1/4 oz (150g) bread, diced
  • 2 3/4 oz (80g) grated parmesan
  • 1/2 cup milk, for soaking the bread
  • 1 egg
  • salt to taste
  • pepper to taste
  • parsley to taste, chopped
  • 2 tbsp, sunflower oil for frying

Preparation

  1. Soak the diced bread in milk and leave for up to 30 minutes. (5 minutes is enough)
  2. Pour the minced chicken into a bowl and mix with the previously soaked bread.
  3. Add the parmesan, salt, pepper, chopped parsley, and egg, then mix everything well until you get a compact dough.
  4. Shape the dough into meatballs of around 1 oz (30g) each and gradually arrange the meatballs on a tray.
  5. Heat the oil in a pan and fry the meatballs until they are golden brown.
  6. Remove them from the oil and place them on a plate lined with absorbent paper in order to eliminate the excess oil. 
  7. Serve the fried chicken meatballs on the table, accompanying them with mayonnaise or any dressing you like.

Tips

  1. You can keep them in the pantry for a few days.
  2. Fried chicken meatballs are excellent to serve in aperitifs, buffets, and dinners.
  3. You can stuff small pieces of cheese such as “Provola” that melts after cooking.
  4. They can also be cooked in the oven at 200°C for 30 minutes.
