How to find best egg substitute for brownies

Today let’s see together how to find the best egg substitute for brownies. There are many ingredients that can be used for this purpose and the good news is that they are all very simple to find in our pantries.

WHY REPLACE EGGS IN BROWNIES?

You might need to substitute eggs in brownies not just because you follow a vegan diet but also as a necessity cause you’re maybe intolerant or allergic to eggs and other foods. For this reason it’s important that you look a valid substitute to adjust to your nutrition requirements. Let’s see together all the possible ingredients to replace eggs in brownies. But first I suggest you take a look at the next section where I briefly explain what is the function of eggs in brownies.

WHAT FUNCTION DO EGGS HAVE IN BROWNIES?

In addition to the flavor, eggs are very important to bind the ingredients and also to help the brownies rise. In fact, if you’re going to substitute eggs in desserts, it’s always a good idea to add a leavening agent such as yeast or baking powder.

WHICH INGREDIENTS TO REPLACE EGGS IN BROWNIES WITH?

1. An egg can be replaced by half a banana  

Bananas are perfect for replacing eggs because they have binding properties and help make the dough moist and soft. All you need to do is mash half a banana in a saucer and add it to the dough, at the beginning of the preparation, just like eggs. This replacement is perfect for preparing brownies though I suggest you put a little less sugar because the banana will sweeten your brownies.

2. An egg can be replaced by 4 tbsp applesauce  

Applesauce are also great for replacing eggs because they have binding properties and help make the dough moist and soft. It’s important to buy or prepare unsweetened applesauce so as not to exaggerate with the sweetness of the brownies.

3. An egg can be replaced by 2 tbsp of potato starch  

Both potato starch and corn starch have a binding and thickening function and are perfect for replacing eggs in dough. In sweet preparations, you just need to add 2 tablespoons to each egg required by the recipe, the only precaution will be to slightly increase the liquid part (milk, water, juice) of the recipe, usually you can increase it a little at a time until you get the right balance between the ingredients.

4. An egg can be replaced by 1/4 a cup of yogurt

Yogurt is an excellent substitute for eggs, among all the ingredients it is my favourite, because it makes the dough very soft and moist, just like eggs. You can also choose chocolate or nutty flavoured yogurts to add in your brownies. I prefer to use Greek yogurt since it also has more proteins than any other yogurt but any yogurt including vegetable soy yogurt should be fine.

5. An egg can be replaced by 1/4 a cup – 2 tbsp of milk

Milk is also perfect for replacing eggs, you can use both vegetable and animal milk. To help with the leavening of brownies, I also recommend is to add a spoonful of apple cider vinegar making the brownies thick and soft, even without the presence of eggs. Adding more milk will result in software brownies.

6. An egg can be replaced by 1/4 a cup buttermilk

Buttermilk similar to yogurt is an excellent substitute for eggs. Also another favorite, it also makes the dough very soft and moist, similar to eggs. 

7. An egg can be replaced by 1/4 a cup silken tofu

Use 1/4 cup of silken tofu, whipped, for every egg it is replacing. The result is a nice smooth texture though it can taste weird for someone with a sensible palate.

8. An egg can be replaced by 1 tbsp flaxseeds / chia seeds tofu + 3 tbsp water

In general, this is an egg substitute which works with every recipe. So if I’m in a hurry and cannot look for the perfect egg substitute I always tend to replace eggs using this ratio. However, in the case of brownies this is not my first to go alternative.

9. An egg can be replaced by 3 tbsp aquafaba.

This is an excellent choice for binding the ingredients together. You can buy this in the grocery store or simply use the liquid from a can of chickpeas or any other beans. Since I’ve also made brownies using chickpeas and turned out delicious I tend to opt for the chickpeas aquafaba but some say that for brownies black beans and red kidney beans liquid is the best.
