Ingredients

For the Potatoes

  • 1/2 kg potatoes medium
  • 1 bulb garlic or 1 tsp garlic powder
  • 1 tbsp paprika sweet (optional)
  • 1/2 bunch sage fresh (optional)
  • 2 tbsp olive oil

For the Salmon

  • 4 salmon fillets (medium)
  • 1-2 tsp dijon mustard paste
  • 2 tbsp greek yogurt
  • 1 tbsp maple syrup

Instructions

Start with the Potatoes

  • Peel potatoes that are around 5cm or if you have larger ones just cut them into equal chunks.
  • In the airfryer basket, toss the potatoes, the spices, and the oil.
  • Make sure to coat all the potatoes with oil and spices.
  • Roast at 380°F (195°C) for 10 minutes
  • Flip the potatoes, and roast for 10 more minutes.
  • Check that the potatoes are fork-tender and crispy on the outside.

In the meantime prepare the salmon

  • Place the fillets skin-side down on a sheet of parchment paper. Cut the parchment paper a little smaller than the size of the basket and leave long sides to lift the salmon.
  • Use a pastry brush to spread the maple syrup, dijon mustard and greek yogurt mix. Sprinkle some pepper if you like.
  • Bake for 13 to 16 minutes, or until cooked through. Cooking time depends on the size and thickness of the fillets. Remove the salmon from the basket immediately or it will continue to cook.
  • Garnish with the parsley, serve with the potatoes. Enjoy!
Notes: Cooking the potatoes before the salmon is a must if your air fryer is too small. This also gives you time to preheat the air fryer for the salmon and lets you set different temperatures for the salmon and the potatoes.
