Ingredients
- 400 g silken tofu
- 1 cup cherry tomatoes halved
- ½ red onion finely chopped
- 2 tbsp fresh parsley chopped
- 2 tbsp fresh basil chopped
- 1 tbsp fresh oregano chopped
- ¼ cup extra virgin olive oil
- 2 tbsp lemon juice
- 1 tbsp balsamic vinegar
- 1 clove garlic minced
- 1 tsp dried oregano
- Salt and black pepper to taste
Instructions
- Carefully drain the silken tofu and pat it dry with a paper towel. Cut it into thick slices or cubes, based on your preference. Arrange the tofu pieces on a serving dish.
