For The Perfect Chicken Avocado Salad

Ingredients
- 4 cups baby spinach
- 2 cup rocket leaves
- 2 avocado
- 600 g chicken breast
- 4 tbsp lemon juice
- 1 tsp garlic minced
- ¼ cup red or green onion minced
- 1 tsp Dijon mustard
- 1 tbsp olive oil
- 1 tsp sweet paprika
- ½ tsp cayenne pepper
- ½ tsp white pepper
Optional Add Ons:
- ½ cup corn roasted, canned or frozen
- 4 cups rice cooked
Instructions
- Start grilling the chicken, sprinkling it with sweet paprika, cayenne pepper, and white pepper.
- Wash and dry the baby spinach and rocket leaves.
- Slice the avocado and place it on plates with the spinach and rocket leaves.
- Slice the grilled chicken and add it on top of the salad.
- In a separate bowl, combine the lemon juice, minced garlic, Dijon mustard, and olive oil to make the dressing.
- Drizzle the dressing over the salad. Toss before serving. Optionally, add some cranberries for extra flavor.
