- 4 cups baby spinach
- 2 cup rocket leaves
- 2 avocado
- 600 g chicken breast
- 4 tbsp lemon juice
- 1 tsp garlic minced
- ¼ cup red or green onion minced
- 1 tsp Dijon mustard
- 1 tbsp olive oil
- 1 tsp sweet paprika
- ½ tsp cayenne pepper
- ½ tsp white pepper
Optional Add Ons:
- ½ cup corn roasted, canned or frozen
- 4 cups rice cooked
Start grilling the chicken, sprinkling it with sweet paprika, cayenne pepper, and white pepper.
Wash and dry the baby spinach and rocket leaves.
Slice the avocado and place it on plates with the spinach and rocket leaves.
Slice the grilled chicken and add it on top of the salad.
In a separate bowl, combine the lemon juice, minced garlic, Dijon mustard, and olive oil to make the dressing.
Drizzle the dressing over the salad. Toss before serving. Optionally, add some cranberries for extra flavor.
