This nutrient-dense frittata is packed with anti-inflammatory ingredients like broccoli, spinach, and fresh herbs, making it a perfect way to start your day with energy and flavor. It’s easy to prepare, meal-prep friendly, and just as delicious cold—perfect for a grab-and-go breakfast or lunch!
Ingredients
- 2 tbsp. coconut oil or olive oil
- 4-6 eggs
- ½ onion finely chopped
- ½ red pepper sliced
- 1 cup courgettes chopped
- 1 cup broccoli chopped
- 6 fresh basil leaves chopped (or ½ cup fresh spinach)
- ½ tbsp. oregano or mixed herbs
- Pinch of chili flakes optional
- Salt and pepper to taste
Instructions
- Preheat the oven to 180°C (350°F).
- Grease an ovenproof dish with 1 teaspoon of oil.
- In a bowl, whisk the eggs together with oregano (or mixed herbs), salt, and pepper.
- Add the chopped broccoli, courgettes, sliced red pepper, onion, and basil/spinach to the eggs. Drizzle with the remaining oil and mix well.
- Pour the mixture into the prepared dish and spread evenly.
- Bake for around 40 minutes or until cooked through and lightly golden on top.
- Let it cool slightly before slicing. Sprinkle with chili flakes if you like a bit of heat!
