    Description

    This nutrient-dense frittata is packed with anti-inflammatory ingredients like broccoli, spinach, and fresh herbs, making it a perfect way to start your day with energy and flavor. It’s easy to prepare, meal-prep friendly, and just as delicious cold—perfect for a grab-and-go breakfast or lunch!

    Ingredients

    • 2 tbsp. coconut oil or olive oil
    • 4-6 eggs
    • ½ onion finely chopped
    • ½ red pepper sliced
    • 1 cup courgettes chopped
    • 1 cup broccoli chopped
    • 6 fresh basil leaves chopped (or ½ cup fresh spinach)
    • ½ tbsp. oregano or mixed herbs
    • Pinch of chili flakes optional
    • Salt and pepper to taste

    Instructions

    • Preheat the oven to 180°C (350°F).
    • Grease an ovenproof dish with 1 teaspoon of oil.
    • In a bowl, whisk the eggs together with oregano (or mixed herbs), salt, and pepper.
    • Add the chopped broccoli, courgettes, sliced red pepper, onion, and basil/spinach to the eggs. Drizzle with the remaining oil and mix well.
    • Pour the mixture into the prepared dish and spread evenly.
    • Bake for around 40 minutes or until cooked through and lightly golden on top.
    • Let it cool slightly before slicing. Sprinkle with chili flakes if you like a bit of heat!
