Nando's Rice Recipe

- 1 tbsp olive oil
- 2 cup water
- 1 vegetable stock cube I prefer homemade
- 1¼ cup white rice 225g
- 1/2 onion diced
- 1/2 red pepper diced
- 120 g peas
- 1 tsp cumin
- 1/4 tsp dried chilli flakes You can use cayenne pepper
- 1 tbsp turmeric
- 1/2 tsp paprika
Heat the oil in a pan.
Fry pepper and onion for 2 minutes or until onion is translucent
Add all the dried spices and cook for further minute
Add rice, hot water and stock to the pan
Add the peas and bring mixture to boil
Turn the heat to lowest possible and leave it to cook slowly covering the lid for around 30 minutes.
Mix the rice regularly to ensure the rice doesn't stick.
Check the rice is perfectly cooked and serve
