For Brownie Baked Oats:

  • 2 medium ripe bananas about 190 g
  • 1 ⅓ cups (120 g) quick oats
  • 5 tablespoon (30 g) cocoa powder
  • 1 tsp baking powder
  • 2 tablespoon (32 g) creamy peanut butter, softened
  • 2-3 tablespoon (40-60 g) maple syrup or any other liquid sweetener
  • 1 cup (240 ml) dairy-free milk
  • 1 tsp vanilla extract

For Chocolate Cream:

  • 5 tablespoon (30 g) cocoa powder
  • ¼ cup (70 g) water
  • 3 tablespoon (60 g) maple syrup
  • ¼ cup (62 g) peanut butter, softened

  • Preheat your oven to 350°F (175°C).
  • In a large oven-safe skillet or baking dish, mash the ripe bananas until smooth.

How To Make Brownie Baked Oats

  • Add in the oats, cocoa powder, baking powder, creamy peanut butter, maple syrup, dairy-free milk, and vanilla extract. Mix until well combined directly in the skillet or baking dish.
  • Spread the mixture evenly in the skillet or baking dish.
  • Bake in the preheated oven for about 25-30 minutes, or until the top is set and the edges are slightly browned.
  • While the oats are baking, prepare the chocolate cream. In the same skillet or a small saucepan, combine the cocoa powder, water, and maple syrup. Cook over medium heat, stirring constantly, until the mixture thickens slightly.
  • Remove the chocolate mixture from heat and stir in the softened peanut butter until smooth and well combined.

How to Serve the Fudge Brownie Baked Oats

  • Once the baked oats are done, remove them from the oven and let them cool slightly.
  • Serve the brownie baked oats warm, topped with a generous dollop of chocolate cream.
