Baked Onions, Peppers and Sausage in Sheet Pan

Ingredients
  

  • 4 Italian sausages or sausage of choice
  • 2 tbsp Olive oil
  • 1 White onion, sliced
  • 2 Red and Orange peppers,, sliced
  • 1 tbsp Spices, dried oregano and/or Italian seasoning
  • Salt and pepper

Instructions
 

STEP 1

  • Place the onions, peppers and sausage in a large sheet pan and add a dash of dried oregano, Italian seasoning, salt and pepper. Drizzle the veggies with olive oil and put in the oven at medium heat.

STEP 2

  • After 5-10 minutes check the sausages and turn them to brown on all sides. Optionally now that the sheet pan and vegetables are already hot you can add some white wine to the onions and peppers and leave to cook for 10 minutes

STEP 3

  • After 10 minutes turn the sausages again one last time. At this point, you might prefer to cut the sausages into slices and mix them with the other veggies. I like to leave the sausage as a whole or cut it from the center flattening it so that all its juices will mix with the rest of the ingredients.

STEP 4

  • Cover the sheet pan with aluminum foil or parchment paper and leave to cook for another 10 to 15 minutes.

Notes

Hint: If you want you can cut the sausage before frying!
