Pioneer Woman Ice Cream Pie

Ingredients
  

For the caramel sauce

  • 4 tablespoons butter
  • 1 cup brown sugar packed
  • 1/2 cup half-and-half
  • pinch of salt
  • 1 tablespoon vanilla

For the crust

  • 1/4 cup egg whites
  • 1/4 teaspoon salt
  • 1/4 cup sugar
  • 1 cup pecans finely chopped

For the filling

  • 1 pint 16 fluid ounces / 473 ml ice cream flavor 1 (e.g. Chocolate)
  • 1 pint 16 fluid ounces / 473 ml ice cream flavor 2 (e.g. Vanilla)

Instructions
 

For the caramel sauce:

  • Combine the butter, brown sugar, half & half, and salt in a saucepan over medium-low heat.
  • Cook and whisk gently for 5 to 7 minutes, until the mixture thickens.
  • Add vanilla and continue cooking for another minute to further thicken the sauce.
  • Turn off the heat and transfer the caramel sauce into a jar. Refrigerate until cold.

For the crust:

  • Preheat the oven to 350 F / 175 C.
  • Beat the egg whites until frothy.
  • Add sugar and salt and continue to beat until the egg-white mixture becomes stiff.
  • Gently fold in the nuts.
  • Spread the mixture evenly over the bottom and sides of a baking pan. Ensure to cover also the sides.
  • Bake for 15 to 20 minutes, until the crust turns golden brown.
  • Set the crust aside, leaving it to cool completely.

To assemble ice cream pie

  • Take the ice cream out of the freezer.
  • Allow it to soften.
  • Spread the first flavored ice cream over the bottom of the crust.
  • Spread the other ice cream over the first flavor.
  • Cover the pie with foil
  • Freeze until it becomes very hard.
  • Prepare the caramel sauce by mixing all the ingredients: butter, brown sugar, half and half, salt, and vanilla.
  • Get out of the freezer and cut the portions.
  • Serve with a spoonful of caramel sauce over each slice!

Notes

  • Allow the pie to soften slightly at room temperature for a few minutes before serving to make slicing easier.
  • Use a sharp, serrated knife to cleanly cut through the frozen pie and crust.
  • Serve the ice cream pie on chilled dessert plates or bowls to help maintain its frozen consistency.
  • Drizzle chocolate or caramel sauce on top of each slice just before serving for an extra touch of indulgence.
  • Garnish with fresh fruit, mint leaves, or crushed nuts to add color, texture, and flavor to the presentation.
  • Serve the ice cream pie with a dollop of whipped cream or a scoop of additional ice cream, if desired.
  • Store any leftovers in the freezer, tightly covered with plastic wrap or aluminum foil, to maintain freshness and prevent freezer burn.
