Ingredients
  

  • 1 tablespoon fresh sage minced
  • 1 teaspoon fresh thyme minced
  • 1 teaspoon fresh rosemary
  • 1 clove garlic minced
  • 1 tablespoon brown sugar
  • 1 teaspoon salt
  • 1 lb 450 g ground pork

Instructions
 

  • Combine all ingredients in a large bowl: sage, thyme, rosemary, garlic, sugar, salt, and ground pork. Using a hand mixer beat the ground pork until well-combined.
  • Divide the mixture into 2-ounce (50 g) portions.
  • Shape each portion into a ball by rolling each portion using your palms and pressing gently at the center and moving your fingers from the center out. Turn them and continue to press gently until the sausage balls are uniform. See tips below.
  • Preheat a nonstick skillet over medium-high heat. Cook the patties on each side for approximately 2 minutes or until they are fully cooked.

Notes

  • To form the sausage balls, apply gentle pressure at the center and gradually work your way outward, while simultaneously rotating the patties in your hand until they are evenly shaped. Create a slight indentation in the center of each patty and distribute some extra meat towards the edges. This technique ensures a uniformly cooked patty.
  • To freeze the cooked sausage balls, arrange them in a single layer on a sheet pan. Once frozen, transfer the patties to a resealable bag. When ready to serve, microwave the frozen patties for 2-3 minutes or until they are heated through.
