whole wheat or corn tortilla

of chicken breast
strips or small pieces

red and green pepper mix
finely chopped

onion
finely chopped

cumin

paprika

cayenne pepper

olive oil

cup
cheese
grated (or Greek Yogurt)
For toppings

avocado

lime

cherry tomatoes
quartered or chopped
Instructions
Add a dash of oil in the pan until hot.
Stir-fry the red and green peppers in a skillet together with the onions until the onion becomes soft and translucent
Add the chicken and season it with some cumin, pepper, paprika and cayenne pepper.
Meanwhile, prepare quickly the guacamole by crushing a ripe avocado with a fork, adding 1-2 tbsp lime juice and garlic powder.
Layer one tortilla with the stir-fry and the cheese.
Top with the other tortilla.
In a pan add some olive oil and cook for 2-4 minutes until slightly browned.
Flip the quesadilla over and cook until also slightly browned.
Cut the keto quesadilla into quarters and serve with the tomatoes and guacamole.
